If your garden is like mine, the tomato plants are taking over! Now is the best time for bruschetta and this recipe is easy and delicious!
2 T Oliverdé Tuscan Herb Olive Oil
5 Cloves of Garlic
1 Pint of Red Grape Tomatoes (halved)
1 Pint of Yellow Grape Tomatoes (halved)
1 T Oliverdé Traditional Balsamic
16 whole basil leaves (cut into strips)
Salt and Pepper to taste
1 Whole Baguette
8 T Oliverdé Butter Olive Oil
Heat olive oil over medium-high heat. Add garlic and stir, lightly frying for about a minute. Pour into a mixing bowl and allow to cool slightly.
Add tomatoes, balsamic, basil, and salt and pepper to the bowl. Toss to combine. Cover and refrigerate for an hour or two if you have the time.
Cut the baguette into diagonal slices. Brush slices on both sides with Butter Olive Oil and grill on both sides. Spoon tomato mixture generously over the slices of bread.
