Toss with garlic olive oil and salt to taste. Roast at 450 degrees for 8-10 minutes.
Sauté trimmed, chopped asparagus with chopped snow peas in sesame oil over medium-high heat until crisp, 3-5 minutes. Toss with soy sauce and toasted sesame seeds.
Shave trimmed asparagus spears and peeled carrots into long ribbons. Toss with Lemon olive oil and salt and pepper to taste. Garnish with toasted almonds.
